POTATO DUMPLINGS
Preparation Time: 30 mins. Number of Servings: 10

Ingredients:
|
3 pounds russet potatoes
|
2 eggs
|
1 cup flour, divided
|
1/2 cup dry bread crumbs or plain cracker crumbs
|
1 tsp. salt
|
1/4 tsp. ground nutmeg
|
dash pepper
|
|
Directions: Boil potatoes for 30 mins. till tender. Drain well. Refrigerate for 2 hrs. or over night.
Grate potatoes. In a bowl, combine the eggs, 3/4 cup of the flour, bread crumbs,
salt and pepper. Add potatoes; mix with hands till well blended. Shape into 1-1/2 inch
balls. Roll them in remaining flour. In a large kettle, bring salted water to a rolling
boil. Simmer, uncovered, till dumplings rise to the top, cook 2 mins. longer. Remove
with a slotted spoon toa a serving bowl. Sprinkle with parsley if desired. These are
EXCELLENT with a roast beef dinner!
