POTATO DUMPLINGS

Preparation Time: 30 mins.

Ingredients:

3 pounds russet potatoes
2 eggs
1 cup flour, divided
1/2 cup dry bread crumbs or plain cracker crumbs
1 tsp. salt
1/4 tsp. ground nutmeg
dash pepper

Directions:  Boil potatoes for 30 mins. till tender. Drain well. Refrigerate for 2 hrs. or over night. Grate potatoes. In a bowl, combine the eggs, 3/4 cup of the flour, bread crumbs, salt and pepper. Add potatoes; mix with hands till well blended. Shape into 1-1/2 inch balls. Roll them in remaining flour. In a large kettle, bring salted water to a rolling boil. Simmer, uncovered, till dumplings rise to the top, cook 2 mins. longer. Remove with a slotted spoon toa a serving bowl. Sprinkle with parsley if desired. These are EXCELLENT with a roast beef dinner!
