Cooper's Cool Cucumber Ribbons(Strips of cucumber peeled into ribbons then topped with a delicious dressing and sesame seems)

Ingredients:

2 cucumbers
2 tablespoons rice vinegar
1 tablespoon canola oil
1/2 teaspoon sesame oil
1/2 teaspoon honey
salt
pepper
sesame seeds

Directions:  Trim the ends off of 2 medium cucumbers, then cut them in half crosswise and peel into strips. Whisk rice vinegar, canola oil, sesame oil, honey, salt and pepper. Toss the cucumbers with the dressing and sprinkle with sesame seeds.
