Goldfish and Fries.(Lovely golden fish with a succulent breadcrumb coating with traditional american fries as a side.)

Ingredients:

| 9oz of potatoes

| 2 tablespoons of butter
|
| 9oz of white fish
|
| 1 tablespoon of minced parsley
|
| salt and black pepper
|
| 3 tablespoons of all-purpose flour
|
| 1 free-range egg, beaten
|
| 2/3 cup of fresh breadcrumbs
|
| olive oil
|
|
Directions: To make the goldfish cakes, peel the potatoes with the vegetable peeler. then slice them up into large chunks. Put the potatoes in a saucepan with enough water to cover, and to boil the potatoes for 15 minutes, then drain them. When they have cooled, mash them with a masher, then add the butter and mash them again.
Next, put the fish in a saucepan of boiling water and simmer it for 8 minutes. After its cooked, remove the fish from the pan, put it on a plate and, when it has cooled flake it into chunks, and take out any bones that are left.
Mix the potato and fish in a mixing bowl, add the parsley and a dash of salt and pepper, and mix it all together.
Wet your hands, divide the mixture into 4 and mold each piece into a fish shape. when they are finished refridgerate them for 25 minutes to firm up.
Now take three small shallow bowls and put the flour in one, the egg(beaten)in the next, and the breadcrumbs in the last. To coat the fish, first roll them in the flour, tapping off the excess, then coat in the egg, and finally the breadcrumbs, pressing them on firmly so they stick.
Shallow fry the fish in olive oil for 5 minutes on each side, or until golden-brown.
To make the fries, preheat the oven to 425*F. Peel 4 large potatos with the peeler, and slice them into long pieces about a 1/4 of an inch thick. Put them in a roasting pan. Pour the oil over the fries and mix them around so they are coated.
Cook them in the oven for 15 minutes, giving them a shake halfway through, until they too are golden-brown.
