Pumpkin Pudding Pie(This is a very good fake pumpkin pie!! I altered a recipe I found in Better Homes and Garden. I made it this weekend (just one pie, cut recipe in half). It doesn’t get as solid as regular pumpkin pie but tastes just as good. )

Ingredients:

| 2 pie crusts (whatever works for you!)

| 1 cup soymilk
|
| 2, 4 serving size packages Vanilla Instant Pudding and Pie Filling
|
| 2, 15 oz cans pumpkin
|
| 1 tsp. pumpkin pie spice
|
| Rich’s Whip
|

Directions: Bake pie crust if necessary (I used a pie crust that I made with Crisco that had to be baked). If you use a graham crust I don’t think you bake those??? But I am not sure! Cool crust.
In a large mixing bowl combine soymilk, pudding mix, pumpkin, and pumpkin pie spice. Beat with an electric mixer on medium speed for 2 minutes. Divide among prepared crusts spreading evenly. Cover lightly and chill at least 2 hours. To serve, top with Rich’s Whip and sprinkle lightly with pumpkin pie spice.
