ROBIN’S ZUCCHINI NUT BREAD(MOIST AND DELICIOUS)

Ingredients:

4 large eggs
2 c. sugar
1½ c veg. oil
1½ Tablespoon vanilla
3 cups grated zucchini
3 cups all purpose flour
1 tablespoon cinnamon
3 tsp baking soda
½ tsp baking powder
1½ tsp salt
a small bag of chopped walnuts
**sift together the dry ingredients**

Directions:  in large bowl beat the 4 eggs till frothy beat in sugar, oil, the sifted flour, cin, baking soda, salt & baking powder. fold in the zucchini and nuts Put mixture into 3 oiled and floured aluminum loaf pans (approx 8 x 3 x 2) cook for about 40 minutes...done when toothpick comes out clean. slightly underbaked is better than overbaked. let cool in pan for about 10 min and then take out. leave on racks to cool bake in 350 oven fo approx 40 min
