Enchilada Casserole(Easy to make and tastes great.)

Preparation Time: 45 minutes
Number of Servings: 10

Ingredients:

5 or 6 Lg Flour Tortillas
1-1 1/2lb. Ground Beef (or chunks of chicken)
1 pkg Dry Taco Seasoning
Chopped Onion (to taste)
Sliced Jalapeno's (to taste)
1 Can Refried Beans
1 Can Enchilada Sauce
Sliced Black Olives (optional)
2-2 1/2 cups Grated Cheese of choice
Oil Spray

Directions:  Brown beef with onions and jalapeno's. Drain; add taco mix as directed. Spray Lg casserol-baking dish with oil spray. Add flour tortillas in layers. Spreading each one with 2-3 tbsp beans. Spread 3-4 tbsp sauce over beans. Distribute desired amount of meat mix over beans and sauce. Add some olives, and desired amt. cheese. Cont. to layer, stop with beans, sauce, meat,olives, and cheese. Cover and place in 350 preheated oven for 30 min. (until hot and bubbly) Cool at 10-15 min. before serving. Reheats in microwave and freezes well. Thaw before heating. Save some sauce and cheese for reheating tortillas absorb them.
