Pumpkin Cake Roll

Ingredients:

3 separated eggs
1 cup sugar
2/3 cup canned pumpkin
3/4 cup flour
1 tsp baking soda
1/2 tsp cinnamon
1/8 tsp salt
Filling: 1 package cream cheese, softened
2 tbsp butter
1 cup powdered sugar
3/4 tsp vanilla

Directions:  Line a 15/10/1 inch jelly roll pan with waxed paper. Beat egg yolks, add 1/2 cup sugar and pumpkin. Beat egg whites till peaks form. Gradually add sugar, beating till peaks form. Fold into egg yolk mixture. Combine flour, baking soda, cinnamon and salt, fold into pumpkin mixture. Spread into prepared pan. Bake at 375 for 15 minutes. Roll up jelly roll style to cool. Combine filling ingredients and beat till smooth. Unroll cooled cake, spread cream cheese mixture on cake and roll up once more.
